Sweet cabbage sheets, lasagna style

Feeling like something similar to Lasagna, lighter and healthier? 
Get your Cabbage, black olives, a portion of rice and minced meat and follow the steps: 



boil your sweet cabbage leaves for 10 mintues. 


Meanwhile, prepare your stuffing: 

In a pot grate and soften an onion in a bit of oil. add the minced meat or chicken pieces. Once cooked add chopped black olives and boiled white rice. and mix well. 




Grease an oven dish and spread the sweet cabbage sheet gently to form a sort of carpet for the stuffing. Then add some of the stuffing on it. spread it evenly before you add another layer of the sweet cabbage sheets. 









Get some Bechamelle sauce and spread it nicely and gently on top of the last layer of cabbage


Wet your wooden spoon with water so that sauce doesn't stick to it

Voila !! 
Then chuck in the oven, and watch till all is cooked and smells wonderfully.

Easy PEAS-y Jwaz (stew)

I got this recipe from my auntie Sliyou, God's peace and blessings be on her. 
Hasn't been a while? 

well well, Ramadan table brings us back together! I hope everyone is well!

This Ramadan my table consisted on one main dish, juice and some sweets. That's all :)

So, I thought of sharing with you a dish that took me literally 20 minutes to prepare. 


Do yo have peas? frozen? it's ok, let's get started 

So we'll need 


  • Medium diced hicken breast or meatballs 
  • half an onion
  • 3 to 4 garlic cloves. 
  • 2 table spoons of oil (of your choice) 
  • 1/2 table spoon of paprika 
  • salt, 
  • Peas (about 500g) or less if you like. 
  • water


In a pot (if you have a pressure cooker, it would be much better), put oil and grated 1/2 onion and garlic and let them soften up a little before you add you chicken cube (if you're adding meatball, don't add them yet)
PS: Careful with the garlic - it burns quickly, you may want to add a spoo of water to help it get soft without burning. 

Stir the chicken with soft onions and garlic until the chicken grilled a little and gives a nice flavour, (if things get dry add a tiny bit of water) 

Add paprika and stir more. 

Add your peas (if they are frozen, it's ok don't wait for them to defrost, just chuck them in the pot)

Then, add water just enough to cover the peas and chicken. ( now you can add you meatballs if you don't want chicken) 


Salt 

Let cook.
If you're using a pressure pot, let it cook for 10 munites. If it's a regular pot, you may want to let them cook longer, and watch and feel the peas until they are soft as you like them. :)
you'll notice the sauce is reduced and thicked a little. 


PS: For the meatballs. once everything is cooked, I usually take them out and put them in a pan with a little oil and butter and let them brown and grill, to give a better taste (cover the pan) 

Place in a dish and decorate with chopped parsley and lemon slices (some people love to squeeze some lemon juice on the Jwas while eating)

Ramadan series: Yummy Healthy Salad

After a whole day of fast, we need a healthy meal that will fill all of our body's needs. Ramadan is as much about purifying our mind and soul than our bodies to me! Anyways, here is a salad I love to make. It's light but also fills you up and is only composed of ingredients that are super good for our bodies and brain! ;D

Ok so here it goes !



Ingredients - and their health benefits!
  • Quinoa - Full of protein for the muscles, magnesium to relax your muscles and blood vessels, fiber to ease the elimination, maganese and copper to get rid of dangerous cancer and disease-causing substances.
  • Red or black beans - Full of protein and iron (like meat but low in fat and cholesterol-free!) and antioxidant (they have one of the highest antioxidant rating of all foods) to reduce risk of cancer and heart disease
  • Corn - Full of fiber and vitamines!
  • Tomatoes - Full of anti-oxydant, lycopene to reduce cholesterol and protect the heart, vitamine C to protect you from immune system deficiencies, cardiovascular disease, prenatal health problems, eye disease, and even skin wrinkling, vitamine A to improve vision, vitamine K which is essential in blood clotting and controls bleeding, potassium to maintain nerve health and iron
  • Avocado  - Full of fiber, vitamine A, C, E, K, B5 and B6 for your eyes, your imune system, your heart, to prevent inflammations, for blood sugar regulation and to prevent cancer
  • Green and/or Yellow and/or Red pepper (I like to put different types to add colours to the salad. In the end I like to put circa 1/4 of a whole peper.) - Full of vitamine A, C and K and antioxydant to prevent cancer and diseases relating to aging, support immune function, reduce inflamations, asthma and arthritis, decrease cholesterol, boost immunity, and reduce the risk of stomach ulcers.
  • Garlic (a couple of cloves) - A natural antibiotic
  • Onion - For your heart and to fight cancer
  • Cilantro (or coriander, however you call it!) - A powerful natural cleansing agent, helps remove heavy metals and other toxic agent from the body, aids stimulate digestion (it also helps relieving stomach gaz... well it helps you stop farting!!)
  • Lime or lemon - Full of vitamine C
  • Olive oil - Full of anti-inflamatory agents, helps reduce cardio-vascular problems, helps the digestion, supports bone health, improves the cognitive functions, helps prevent cancer.
  • Cumin powder - Reduces cholesterol and helps prevent diabet
  • Salt

 



Step 1:
Put the quinoa to cook: for one cup of quinoa add one and a half cup of water in a pot. Put it to boil, then reduce the flame and let the quinoa cook until there's no water left in the pot. (It takes aproximatively 20 minutes.)



  
Step 2:
While the quinoa is cooking, drain the corn and beans and chop the rest of the veggies and the cilantro. Mix together. Add the cooked quinoa to the salad.





Step 3: The Sauce!
Add the juice of a lime to 4 table spoons of olive oil. Add 2 pinch of salt and a tea spoon of cumin powder. Mix well and add to your salad.




Step 4:

!!!Enjoy!!! :D

Of course you can add things up or remove ingredients you don't like and change the recipe to your liking! :D

Eat with a variety of other fruits and veggies for an even more balanced diet! :)

Thick Norwegian Salmon soup

This is my sisters recipe which she learnt from a friend and she said she changed few bits. Dont know which. 
Can be eaten with white rice, wholemeal bread or if u fancy on its on as a soup.

Meal for 4
Ingredients:
 
2 small pieces of salmon fillet.
1 big potato
3 carrots
Half a courgette
1 small onion
Half a leek
3 bits of garlic.. Dont know what the small piece are called.
2 tea spoons of tomato puree or 2 table spoons or canned peeled tomatoes.
Salt, black pepper, thyme and oregano.
Milk 1.5 mug

Method:

Chop all the veggies (meduim)
Galric (mash up)
- In little olive oil fry the onions and garlic.
- Add the carrot, leek, potatoes. (in that order)
- Add the tomatoes puree.
- Add the salt, black pepper, thyme and oregano.
- Stir and stir and let them cook. Add a lil water when they get dry and let it evaporate.
- Add half a mug of milk and let them cook nice and slow.
- Add the courgettes
- Add the salmon (make sure it's skinned)
- Stir, add the remaining milk and wait 5 mins before you cover it for 20 mins on low heat.
(((note that the smell at all stages do not reflect the taste... Thankfully the taste is better, so keep tasting to make sure everything is cooking and not overcooking)))
-Enjoy it.

PS: Also add more of the humble spices before putting the lid on for 20 mins if u fancy.

Pasta bake with veggies - Yemeni Hands

This is a simple recipe for pasta and cheese lovers.


I just followed instructions on the pasta sauce jar.

Cooking time: 40 mins, serves 6

Ingredients:
  1. Pasta (i used wholemeal) 3/4 of a medium pack.
  2. Cheese (i used mozzarella and cheddar).
  3. A generous amount (depends on u).
  4. Pasta bake ready sauce (whole jar) I will upload the pic of it.
  5. A whole medium red onions
  6. A carrot
  7. 1/4 green pepper
  8. 1/4 orange or red pepper
  9. Salt and black pepper.




Method:



Preheat the oven on the highest.

Boil your pasta (salt and olive oil)
Fry the chopped veggies in a bit of vooking olive oil. Start with the carrots, onions and peppers. 


When the pasta has cooked fully, drain it and add it to the pan which has the veggies.
Cook together for 3 mins and add salt and black pepper.
Pour the sauce jar into a deep-ish oven tray.
Add water (not boiled( to the empty jar, shake it and add it to the pasta mixture.
Put the pasta mixture into the oven tray.
Mix it all up.
Put it in the oven.
Take it out in 20 mins.
Can add more black pepper at this stage.
Add half the cheese into the pasta. Make sure it goes all in and everywhere. It will be melting. Yummmy.
Sprinkle the rest on top and back in the oven until the cheese on top is golden brown.

Serve hottt and enjoy.

Broccoli Soup

For those of you who wonder about the kinds of food that are high in vitamin C, contain multiple nutrients which are effectively a strong preventive from cancer, regulate blood pressure thanks to the high amount of calcium, magnesium and vitamin K - which helps keep the bones healthy and prevent from osteoporosis-. 
This preventive food is also good against gastric problems and bacterium, such as the H.Pylori; heart disease and  Anemia. 
This natural source of vitamin A, Beta carotene, fibers,  Antioxidants and zinc is extremely beneficial for eyesight, skin, digestive problems (prevents constipation) and regulating blood sugar. 


This soup is easy peasy, here we go: 
Ingredients 



  • 3 medium potatoes 
  • 1 medium onion 
  • A head of broccoli
  • 1 glass of milk. 
  • Water
  • Parsley
  • Salt
  • Cheese (hard cheese of your liking. I went for red cheese this time) 



Method: 


Peel and dice the potatoes, and the onion, before you bring them to a boil. (salt) 
Cut the broccoli florets and steam them for like 3 to 5 mins. 


Once everything is cooked, blend your veggies and add milk bit by bit until you get a thick mixture. Add water thoroughly, little by little, until you get the lump-less consistency you like. I like my soup to be thick and 'velouté'. 
Chop parsley ( a small bunch) and add it to the soup. (salt) 
Dice the cheese (or grate it if you prefer)  


Serving: 


This soup goes very well with toasted bread or garlic bread.

Ajeejaat Broccoli

This Algerian recipe is originally made of cauliflower. I didn't have any, so I used broccoli instead.  It turned out just fine. The small broccoli florets, in a crown, make great companions for soup and broth. (yumm)

The ingredients I used were the following: 


A broccoli crown (washed, florets cut and steamed for 5 mins)
1 or 2 egg yolks 
2 tbsp of milk 
1 tbsp of finely chopped parsley 
2 to 3 tbsp of flour. 
A pinch of alt
(you can also add 1 tbsp of lemon juice-optional)





The method


Steam the little broccoli florets for like 5 minutes.
Meanwhile, make your dipping sauce by putting all the ingredients, mentioned above, in a bowl and mix. 
Once cooked, dip the broccoli florets in the ready eggs sauce then stir fry them for 3 - 4 mins until golden brown. 
Drain them from oil. and serve them warm with some lemon or vinaigrette. (that's if you didn't put any lemon previously

Tuna pasta salad

The steps are illustrated in the pictures. Pretty simple . Enjoy :)  




Ingredients: 

Pasta, half a tin of tuna, 2 egg, olives, quarter of 1 red onion, half a tin of kidney beans, half a green pepper and half a red pepper, sweet corn, mayo ♥, salt, black pepper, olive oil and if u have caeser salad dressing it will be buff.

This is how it's made:

Boil pasta, boil 2 eggs.
Finely chop: onions, red and green peppers.
Get the remaining ingredients ready.
Rub the chopped onions in lots of salt for 20 secs then rinse it with cold water really well. This makes ur mouth stink waaay less.
Now the thing which rocks in this salad:
Fry the peppers in a wee bit of olive oil for 5 mins and then add the kidney beans. Brings out both of their flavours.
Mash the tuna with mayo and black pepper until smooth.
Cut each egg into 16+ pieces.
Add everything together including the remaining of the ingredients.

Enjoy.
